Description

This course covers the basics of sensory perception and preference, and the science behind the evaluation of food products, with a focus on discrimination and threshold testing, descriptive profiling and the basics of training a sensory panel, as well as consumer and hedonic testing. Basic statistical analysis, experimental design, and application of this knowledge in the food industry will be discussed.
